The idea of an onion bagel, with a generous helping of cheese, was born by two students at the University of Exeter in the US in 2004.
After several failed attempts, they decided to try something different.
So they created an onion, then baked it and made a salad of it, with some tomatoes, basil, a small piece of garlic, and some olive oil.
It was a hit.
It became a cult favourite, which it remains to this day.
So, they tried it again in 2010.
They added a bit more cheese and onion and got some more sales.
The results were spectacular.
So in 2011, the pair took on the challenge of developing a version of the bagel that could be eaten by a single person.
“It took us a couple of years to get it to work, but we finally got it to go down well with a single human,” says Mark, who is now based in Australia.
“Then we had a few more people try it and we had the first successful test.”
It turned out that the onion had a very special kind of texture.
“The bagel itself is a very delicate thing,” says Peter.
“When it’s eaten by the person who’s in it, it’s actually very tender.”
This tenderness is what they were after when they decided on making a salad for the first time in the UK, which was a challenge because of the UK’s extremely high food waste and a strict policy on bagel-eating.
“So we took a lot of the best of the world’s best salads, and we blended them with onion and garlic and olive oil, and that made it very, very special,” says Simon.
“The onion bagels we ate were so tasty, you could barely taste anything other than the garlic,” says Tim.
And then the other day I went to the supermarket and bought a bagel for my daughter to try.
It’s amazing, what a great product.
“Simon and Peter have now produced another version of their onion bagelman, this time made from a small, sweet, sweet potato, but this time it’s made from whole, peeled, unprocessed green onion, with no additional cheese or oil.
The onion has been carefully ground up, dried, and then ground up again, adding more flavour.
“What we’ve really wanted is for people to try them for themselves, so they can taste it for themselves and come to their own conclusion.” “
